Not because it will make homemade gelato better, but just because it’s faster. With a machine, ice cream can take only about 1 hour to make, from start to finish. How to Make Gelato Without Ice Cream Maker

Firstly get your ingredients together. For this tutorial, I will be making a Dark Chocolate Gelato. In the town where I am from, there is a gelato bar that is extremely popular. This surprised me immensely because this is insanely easy to make even without a maker! So let’s see exactly what we need.

Ingredients

With this recipe, I will be making roughly 400 grams of gelato.

  • 1 Large Egg Yolk (room temp)
  • 75 grams of granulated sugar
  • 1/2 cup milk (cold)
  • 1/2 cup heavy cream (cold)
  • 1/4 cup cocoa powder
  • 50 grams of chocolate ( 60 % dark chocolate )

And that’s all you need! This recipe can be halved, doubled, or tripled, depending on how much you want to make!

The Method

For this tutorial, I have broken up the method into 3 parts. Making the Chocolate, Making the gelato, and Freezing the Gelato. This breaks the method up and makes it easier to follow.

Part 1: Making the Chocolate

  1. In a bowl mix half of the sugar and the cocoa until combined
  2. On very very low heat, In a saucepan add the cocoa sugar mixture and the cold milk, stir with a whisk
  3. Do not let this boil! Stir for about 4-6 minutes. It’s important to not let the milk boil, remove it from the heat if you think it’s getting too hot
  4. Add the chopped chocolate pieces
  5. Continue to mix

Part 2: Making the Gelato

  1. Whip the egg yolk, and remaining sugar, until thickened and frothy
  2. Add the chocolate milk mixture to the egg mixture
  3. stir to combine
  4. Transfer this to a saucepan and heat on very very low heat ( do not let it boil )
  5. Stir slowly for 5 minutes
  6. Once the mixture has thickened, that means it’s ready
  7. remove from the heat
  8. add the heavy cream
  9. stir to combine

Lastly Part 3: Freezing the Gelato

  1. Pour the mixture into a container.
  2. Place in the fridge for 45 minutes
  3. Transfer to the freezer after 45 minutes
  4. Using an electric whisk mix the gelato every 30 minutes for 4 hours
    • Whisk at low speed
    • Whisk for about 20 seconds
    • Scrap the Sides with a knife
  1. The gelato should become thicker at around the 3-hour mark.
  2. Leave the gelato to set properly

Ingredients
  

  • 1 Large Egg Yolk (room temp)

  • ½ Cup Cold Heavy Cream
  • ¼ Cup Cocoa Powder
  • 50 Grams Chocolate (60% or 70%)

Instructions
 

Part 1 Making the Chocolate

  • In a bowl, mix the cocoa and half the sugar until combined
  • On very very low heat, in a saucepan add the cocoa micture and the cold milk. Stir with a whisk
  • DO NOT LET IT BOIL. Stir for 4-6 minutes
  • Add the Chocolate
  • Stir until melted and remove from heat

Part 2 Making the Gelato

  • Whip the room temp egg yolk and remainder of the sugar, until thick
  • Add the chocolate mixture to the egg mixture
  • Stir to combine
  • Transfer to a saucepan and heat on very very low heat
  • Stir slowly for 5 minutes
  • Once mixture is thickened, remove from heat
  • Add the cold Heavy Cream
  • Stir to combine

Part 3 Freezing Process

  • Pour the mixture into a container
  • Cool in fridge for 45 minutes
  • Transfer to freezer
  • Using an electric mixer, mix every 30 minutes for 4 hours.
    TIPS: Mix on low speed for 20 seconds at a time. Scrap the sides with a knife
  • The Gelato should become thick at around the 3 hour marl
  • Leave the Gelato to set properly
