How to make New Zealand Lolly Cake

This is exactly how to make New Zealand Lolly Cake. This recipe is so quick to make, in fact, it’s so quick, that you can make it in under 15 minutes. The setting time is 2 hours though. So let’s get started.

New Zealand Lolly Cake

Lolly Cake is a New Zealand sweet slice that uses only 5 ingredients! I have yet to meet a person who isn’t a fan of Lollycake. This New Zealand classic is commonly seen in bakeries but can easily be made in your very own home. Give this recipe a try and let me know how it goes.

What you need:

  • 1 Packet of Malt Biscuits ( 250g)
  • 100g Melted Butter
  • 1/2 Can Sweetened Condensed Milk (avg 200g)
  • 190g Fruit Puff Style Lollies or Explorers puff Lollies
  • Desiccated Coconut (1/2 cup ish)
  • Baking Paper

The Steps

  1. Firstly finely crush up malt biscuits. This can be done in a food processor, blender, or with a rolling pin and a plastic sandwich bag.
  2. Combine the melted butter, and sweetened condensed milk into the biscuit fine crumbs.
  3. Cut the lollies up, so they are in pieces about 1x1cm.
  4. Add the lollies to the mixture and combine. Use hands if need to.
  5. On baking paper, make a log out of the mixture
  6. Pour the coconut over the log, and roll it around so all sides are covered.
  7. Wrap the log in the baking paper and place in the fridge for 2 hours
  8. Once set, cut and enjoy.

Ingredients
  

  • 250 g Malt Biscuits
  • 100 g Melted Butter
  • 200 g Sweetened Condensed Milk
  • 190 g Fruit Puff or Eskimo Lollies
  • 1/2 Cup Desicated Coconut

Instructions
 

  • Finely crush the malt niscuits. A food processor or blender can be used. If you dont have this equipent, use a plastic sandwich bag and a rolling pin.
  • Combine the melted butter, sweetened condensed milk into the crushed biscuits
  • Cut the lollies into 1cm pieces
  • Add lollies and combine, use hands if need to
  • On baking paper, make a log with the mixture
  • Pourthe coconut over the log, and roll it around so all the sides are covered.
  • Wrap the log in baking paper and place in frdge for 2 hours to let set
  • Cut and serve once set

Notes

The log does not need to be rounded, if it has a flat bottom that’s okay
